Oatmeal Pumpkin Bread

Recipe testing is over and I’m ready to officially share my oatmeal pumpkin bread! This recipe is gluten free, full of fiber and real goodness. Try it out for breakfast or dessert!

Oatmeal Pumpkin Bread

Ingredients:

  • 1 cup gluten free flour
  • 1/2 c Trader Joe’s rolled oats
  • 1/2 t baking soda
  • 1/2 t baking powder
  • 1 1/2 t pumpkin pie spice
  • Heaping 1/2 c organic pumpkin purée
  • 1/2 c almond milk
  • 1 egg
  • 3 T grass fed butter
  • 1/3 c local honey
  • Splash of vinegar

Topping:

  • 1/4 c rolled oats
  • 1 T butter
  • 1 1/2 T honey

Directions:

Pre-heat oven to 350 degrees. Mix dry ingredients and wet ingredients separately and then combine and mix. Spray bread pan with coconut oil. Add batter into pan and smooth top until level. Mix together topping ingredients and add before baking. Bake for 28 minutes or until thoroughly cooked (toothpick check!).
