As the days get warmer, I find myself sipping on smoothies almost daily. A smoothie can be an excellent source of nutrients if it is built correctly. Combining a low-sugar base like unsweetened almond milk or grass-fed yogurt with a multitude of fresh/frozen greens, fruits and veggies, the options are endless. Smoothies can be quite satisfying if you add in healthy fats and protein like various nuts, nut butters and/or collagen. In the case of this concoction, I did what I do best — I threw in a bunch of frozen goodies in the Nutribullet and hoped for the best. To my pleasant surprise, I found that my smoothie resembled that ever-so-popular “nice cream” that I heard so much about and tasted like a dream. This treat is low in calorie and packed with goodies and is sure to satisfy your sweet tooth!
- 1 small frozen apple (I used fuji)
- 1 small frozen banana
- 1 1/2 c. unsweetened vanilla almond milk
- 1 1/4 c. Trader Joe’s shredded broccoli slaw **frozen**
- 1 scoop Further Food collagen
- 1 T shredded coconut
- 5 halved walnuts
Blend it all together and top with a dash of cinnamon, shredded coconut, and a drizzle of local honey!
