Cheeseless Buffalo Chicken

My passion for making comfort foods healthy has lead me to a guilt-free dinner that’s oh so satisfying. By now, you have probably realized that I enjoy buffalo chicken very much, and my latest recipe might just be the healthiest one yet. This easy recipe contains no cheese, so my dairy-free friends can enjoy it!

Cheeseless Buffalo Chicken

  • 1 package of ground chicken
  • 1/2 bottle of Frank’s buffalo sauce
  • Trader Joe’s frozen riced cauliflower
  • 1 1/2 T Extra Virgin Olive Oil
  • turmeric
  • cayenne pepper (optional)
  • 1/4 avocado, sliced

Cook the chicken in a skillet with the EVOO. After it is fully cooked, turn the heat off and season generously with turmeric. Add a dash of optional cayenne pepper and half a regular bottle of Frank’s buffalo sauce. In a separate skillet, cook the frozen riced cauliflower, then mix with the cooked and seasoned chicken. Topping this dish with avocado gives you that creamy texture of the buffalo chicken without the cheese! I like to eat this with steamed broccoli, mushrooms, sweet onion, kale and brown rice.
