I’ve got some delicious and satisfying meatless meals that I want to share with you all! These meals still contain plenty of protein sans meat. Enjoy!
Red beans and brown rice with chopped asparagus and Trader Joe’s roasted cauliflower. Sprinkle some nutritional yeast on top for added flavor!
Red beans and brown rice with Trader Joe’s roasted eggplant, zucchini and red peppers (my favorite frozen vegetable mixture of all time!!)
Some sautéed kale, purple potato, avocado and a hard boiled egg (or two) make a savory and creamy combination. The potato has 1 tsp Ghee and a little salt on top! Sautéed kale was made with olive oil and cooked until a little crispy!
2 whole eggs scrambled on corn tortillas, mixed with bell peppers and onion. Seasoned with nutritional yeast and turmeric. These scrambled egg tacos would go fabulously with some avocado of course!
