Avocado Chicken Salad

Ingredients:

  • 3 cooked chicken breasts (seasoned with turmeric, paprika and salt)
  • 1.5 – 2 avocados
  • 2 stalks of celery, chopped
  • 1/4 sweet onion, chopped (optional)
  • 3-4 hard boiled eggs, chopped
  • cayenne pepper
  • black pepper
  • salt

Chop or pull the chicken breast and place in a bowl. Add chopped celery, onion, eggs and mix. In a separate bowl, mix the avocado until it is a smooth consistency. Add the avocado to the chicken bowl and mix well until the chicken is covered. Season with cayenne pepper, black pepper and salt to taste. Enjoy on a salad, potato, or as a sandwich 🙂
