Lunch Bowls

Here are a few of my latest recipes to keep your lunches filling and exciting!

Purple Potato Bowl:

  • spinach base
  • turmeric riced cauliflower
  • 1 hard boiled egg
  • 1/2 steamed purple potato
  • 1 oz goat cheese
  • handful of green bean chips
  • seasoned with salt and black pepper

Fajita Veggie Bowl:

  • bed of spinach
  • 4 oz fajita steak
  • 1/2 cup turmeric riced cauliflower
  • 3 sliced of roasted eggplant
  • roasted turmeric broccoli
  • Cle Krautย Curry Kraut
  • goat cheese crumbles

Egg Taco Bowl:

  • 1 corn tortilla (heated for about 10 seconds)
  • 1/2 cup turmeric riced cauliflower and shredded brussels sprouts
  • cooked red onion
  • steamed broccoli
  • handful of spinach
  • sunny-side up egg
  • goat cheese crumbles
  • black pepper and salt to taste

Eggs-Over-Rice Bowl:

  • 1/2 cup brown rice with ghee
  • sautรฉedย red and green bell peppers
  • roasted broccoli and eggplant
  • sunny-side up egg
  • goat cheese crumbles
  • salt and black pepper to taste

As you can see, a lot of these dishes have similar core ingredients. At the beginning of the week I do most of my cooking so that I can assemble different meal combinations based on what I want and need. It’s really helpful to have it all cooked ahead of time and throw it in a bowl with an egg on top. The key to consistent health is surrounding yourself with delicious and wholesome foods!
