Steamed Turmeric Carrots

I swear I come up with some of my favorite recipes by accident. This week I bought a bag of baby carrots because they were on sale. I knew I wasn’t going to eat them raw, so I steamed them and mixed them with some cooked kale. I seasoned the mixture with a generous dose of turmeric, black pepper, and a sprinkle of sea salt. After tasting, I realized that turmeric and carrots just might be meant to be together forever. The combo of flavors made my mouth very happy.

I threw together a bowl of these steamed turmeric carrots with a hardboiled egg and half an avocado for breakfast and it totally hit the spot! I loved the different textures and flavors together so much that I’ve eaten it three times this week! The healthy fats from the eggs and avocado helped to keep me full all morning along with the fiber from the carrots. This bowl is overflowing with healthy deliciousness, and that alone adds another layer of satisfaction. Long story short, this bowl contains vitamins that promote healthy eyes and heart, along with anti-cancer and anti-inflammatory benefits. By pairing the carrots with eggs and avocados, we are ensuring maximum absorption because fat-soluble vitamins are best absorbed in the presence of fat. Pair this bowl with my hot apple cider vinegar drink or a nice cup o’ jo 🙂

Steamed Turmeric Carrots

  • 1 bag of baby carrots
  • 1 t ghee
  • Turmeric
  • black pepper
  • Iodized Sea Salt

You can steam the carrots in the microwave by adding a little water to a bowl and covering it (I use Glad Press ‘N Seal). For half a bowl of carrots I would recommend about 3-4 minutes, or until the carrots are tender without being mushy. Drizzle melted ghee over the cooked carrots, add a generous amount of turmeric, a dash of black pepper, and mix well. Tip: sprinkle sea salt on top after you have prepared your dish, instead of adding it to the carrots before storing them. This way, you can really enjoy it’s complimentary flavor without adding salt twice. P.S. sea salt + avocado is another match made in heaven.
