My mom is always providing me with new and delicious recipes, she’s a constant source of food inspiration! Recently, she made us the most delicious and healthy ground chicken nachos, and sent me back to school with a new spice for my arsenal — chili powder. This week, I made a variation of her chicken recipe and found that it’s just too good not to share!
- 2 packages of ground chicken
- 2 red bell peppers
- 1 yellow and 1 orange bell pepper
- pickled jalapenos
- hot sauce of choice
- chili powder
- olive oil or 1 t ghee
Chop up the peppers into small chunks and cook on the stove top until semi-soft. Cook the ground chicken in a separate pan on the stove top. Season the chicken with chili powder to taste, then mix in the peppers. Add about 1/3 – 1/2 cup of your choice of hot sauce and mix well. Top with pickled jalapenos and enjoy with brown rice, quinoa, or tortilla chips!
