Broccoli Apple Salad

I came up with this recipe when I found a broccoli salad kit in the grocery store! This is my take on a much healthier + heartier version 🙂

  • Broccoli salad kit (sunflower seeds, dried cranberries, dressing)
  • Pink Lady Apples (chopped)
  • 1/2 Red onion (chopped)
  • Balsamic Vinegar
  • Apple cider Vinegar
  • quinoa (1-2 cups)
  • spinach
  • Cinnamon

In a large bowl, mix together the broccoli salad, sunflower seeds, dried cranberries, apples,  quinoa and onion. If you’d like, pour in 1/4th of the broccoli slaw dressing from the kit, then mix. Next, add 3-4 T of balsamic vinegar, 2-3 T of apple cider vinegar, and a heavy sprinkle of cinnamon. Mix once again. Keep this mix in the refrigerator, and place it on a bed of spinach when you’re ready to eat! I personally think the cinnamon gives it a unique taste, bringing out the best of the apple, broccoli and onion. The broccoli salad kit came with about a 1/4 c. of dried cranberries and sunflower seeds mixed together. These are a great addition to the salad! It’s important not to go overboard with dried fruit because it is  quite high in sugar.
