Brunch For One

On the weekends, I like to branch out and take some time to come up with a yummy breakfast idea. Today, I had to be extra creative because my fridge and pantry are just about bare bones. Oatmeal was out of the question due to a lack of toppings, so I turned to the fridge for inspiration. To my great delight, I was able to whip up a brunchy + healthy quesadilla.

Brunchadilla

  • 1 whole egg and 1 egg white
  • cheese of your choice
  • two corn tortillas
  • 1/2 cup of cooked broccoli
  • salt and pepper to taste

Cook the eggs scrambled, then add the broccoli, salt and pepper. Crisp up the tortillas, melt the cheese + put it all together!

This recipe is under 350 calories and is incredibly satisfying 🙂 Happy Sunday!
