Warm Kale Salad

Warm Kale Salad

ingredients:

  • 3-4 big handfuls of cut kale
  • 2 T olive oil
  • 1 1/2 T Apple Cider Vinegar
  • 1/2 chopped apple (I use Fuji)
  • small handful of crushed walnuts
  • salt to taste

Heat up a skillet on high and with olive oil and apple cider vinegar. Add kale and chopped apple. Sautèe until kale softens and becomes a deep green color. Apples should be cooked to the point where they are warm and a little soft. Plate the salad and add walnuts and a pinch of salt. Enjoy with a light sandwich or wrap. I like to pair the salad with a turkey and cheese quesadilla on a corn tortilla.
