Healthy Buffalo Chicken Dinner

If you’re anything like me, you’ve got the buffalo chicken fever, and no I’m not referring to the inevitable sweat you break into while eating that hot and creamy goodness.

We all know that buffalo chicken dip is not the best for our waistline, so I am here to give you my healthy alternative that will leave you satisfied and guilt free.

What we’ve all been waiting for…

Healthy Buffalo Chicken Dinner 

  • 2 lbs of ground chicken
  • 1 1/2 – 2 c. Oikos Plain Greek Yogurt
  • 3/4 cup shredded Cheddar cheese
  • Frank’s Hot Wing Buffalo Sauce
  • broccoli florets (steam-in-bag works great)
  • quinoa (steam-in-bag available in the frozen section of Giant Eagle)
  • jalapenos

Swaps: you can make this dish with 1/2 block of cream cheese and 1 cup of Greek yogurt or 1 block of Greek yogurt cream cheese (found at Kroger – delicious!)

Coat the bottom of a large skillet with vegetable oil and heat on high. Add ground chicken and chop until it is in bite size pieces. Cook thoroughly. While cooking the chicken, pop the broccoli and quinoa into the microwave.

I used leftover roasted broccoli from last night.

Drain any excess water from the skillet – you don’t want this to mix with the sauce. After draining, place skillet back on the stove and lower the heat to a simmer.

Add the Greek yogurt and shredded cheddar and stir until the chicken is evenly coated. Add the broccoli to the skillet and then coat with the buffalo sauce. Depending on your heat tolerance, you should add the buffalo sauce until it is to your liking.

If you really want to kick up the heat, top your buffalo bowl with Jalapenos! This chicken can also be converted to a dip if you swap out the quinoa for tortilla chips. Either way, it will satisfy your belly. Enjoy!!
