Comida Mexicana y Sol

Last week I had the greatest time in Cancun, Mexico with my wonderful boyfriend and friends. We stayed at the Royal Sands resort, which truly felt like paradise. We had an all-inclusive package, so naturally we ate and drank like kings and queens. I’d love to share with you some of the highlights of our stay..


When we landed on Saturday we went to an outdoor restaurant attached to the airport and order a few appetizers to share. The nachos that they served us were unreal. (I still can’t believe I said that about airport nachos)

This was the spectacular view of the sun rise from our villa. No matter what time it was, the ocean was always a beautiful ombre of blue.


I consumed as many gin + tonics (and pina coladas) until my heart was content. We also decided to try every specialty drink on the bar menu and the Mango Lele and Banana Monkey were the fan favorites.


Every day I had these shrimp tacos for lunch while lounging at the swim up bar. This is absolutely my idea of what heaven is like.

We found out that guac truly goes well with anything… Mas guacamole por favor!!

We ended our trip at a fancy seafood restaurant called Captain’s Cove and ate until we could not fit another bite into our stomachs. On the menu: mussels in white wine sauce, calamari, shrimp ceviche, seafood dumplings, shrimp risotto (knocked my socks off), Captain’s shrimp trio, blackened grouper and so much more. We did not have a bad meal in Mexico, but this was hands down the best of all. We were lucky enough to catch the sunset while eating on a covered patio!



Mexico has truly stolen my heart after a trip like this. It was so nice to relax and indulge for a week. The variety of food was amazing, and for the most part, healthy. Of course, the quantity consumed may have been a little overboard, but that’s what a vacation is for. Even with my gluten intolerance, I did not feel shorted one bit. There was always an alternative option that I could choose so that I could enjoy the food with the rest of my friends. I would go back to the Royal Sands Resort in Cancun in a heartbeat.


Now, it’s back to reality and the ever so familiar cold of Ohio.. I’m feeling the post-vacation blues. But I’ve gained so many wonderful memories that I can’t help but be grateful for it all ๐Ÿ™‚
