Busy Bee

I am slowly running out of groceries because I am going on vacation in a few days. This is a time where creativity is necessary. I pulled together a lunch of sweet potato, PB2 and yogurt, and asparagus. It was something I whipped up with the ingredients that I have left and it was quite delightful. This meal is under 400 calories and took me 20 minutes to make! It is packed with protein, healthy fibers and many  essential vitamins. It is times like these that I am thankful that my pantry is filled with healthy necessities 🙂

1 small baked sweet potato — cooked in the microwave for 5 minutes, then placed in the oven to crisp up

1 serving of Oikos Plain Triple Zero Greek yogurt with 2 T of PB2 Fit powdered peanut butter

Asparagus cooked in the oven on 385 degrees for 20 minutes or until the tops are crispy. I drizzled olive oil on them and seasoned with salt and pepper.

This is a meal that my vegetarian friends can enjoy!

Earlier this week I made another batch of granola, so I also want to share with you my recent variation:

Oatmeal Raisin Granola

  • 2 T  Land’O Lakes butter (with canola oil)  
  • 2 1/2 T  Coconut Sugar 
  • 1/4 cup chopped walnuts 
  • 1 cup Rolled Oats 
  • 1 t cinnamon
  • raisins 

Preheat oven to 325 degrees. Melt the butter in the microwave for about 25 seconds. Mix in the coconut sugar and cinnamon. In a big bowl, combine rolled oats, and sugar mixture until the oats are visibly coated. Spread the mixture onto a cookie sheet that has been lined or sprayed to prevent sticking. Cook in the oven for 8 minutes, shake up the granola and put it back in the oven for about 6-7 more minutes, or until golden. The granola will still be soft when you take it out of the oven, it hardens up as it cools. Enjoy with yogurt, fruit, or by itself! Add the raisins and walnuts after the granola has come out of the oven. If you mix it in before, they will burn and taste funny (I know from experience).

 

I feel like I have been on the run for the past two weeks, and spring break has come just in time. I have had so much to do and so many places to go. I am in need of a slow down and a time to reset myself. I hope you all can find some time this weekend or during the week to set aside to take care of yourself. It is so important to tune into your body, mind and soul and listen to what you need.
