Pb & J Oatmeal

For some reason I always forget that mixing fruit and peanut butter is actually delicious! Here’s the recipe I used for my oatmeal this morning:

Peanut butter and Jelly Oatmeal

  • 1/2 cup rolled oats
  • 1/4 cup frozen cherries
  • 1/4 cup frozen blueberries
  • 1/4 cup frozen strawberries 
  • Cinnamon
  • 2.5 T almond milk
  • 3/4 cup water
  • 1/4 cup plain Oikos Triple Zero Greek Yogurt 
  • 2 T PB2 fit 
  • Chopped pecans
  • 1.5 t coconut sugar

Cook the rolled oats in water in the microwave for 1 minute and 30 seconds. On a separate plate, defrost frozen fruit for 1 minute or until warm. Mix almond milk, cinnamon and 1 t coconut sugar with the cooked oats. Mix the powdered peanut butter with the Greek yogurt. Top oatmeal with fruit, yogurt and sprinkle some pecans and coconut sugar on top — enjoy! 🙂 

This oatmeal is filled with protein and fiber. It’s around 350 calories and perfect for breakfast, especially post-workout!
