Chicken Meatballs

On the menu tonight was homemade chicken meatballs with a side of zoodles or whole grain pasta! I topped it off with my favorite Mids pasta sauce. The meatballs were “knock your socks off” good, and I just needed to share this recipe with you all.


Chicken Meatballs

  • 1 egg – beaten
  • 1 lb ground chicken
  • 1/4 cup Parmesan cheese
  • 1/2 cup Shredded mozzarella
  • 5 Fresh Basil leaves – chopped
  • 1/2 onion – chopped (optional)
  • Salt and Pepper
  • 1/2 T Italian seasoning
  • Red pepper flakes (optional)

Preheat oven to 350 degrees.

Combine the beaten egg, chopped onion, Parmesan cheese, mozzarella cheese, chopped basil, salt, pepper, and Italian seasoning to a bowl and mix well. Add in ground chicken and mix until consistent. Form meatballs with the help of a small spoon or just your hands.

Place the meatballs in the oven on 350 for 20-25 minutes. Check to see if they are done by cutting a meatball placed near the center of the pan in half.

I triple this recipe when I’m meal prepping and it can provide many delicious meals for two people! *When I triple the recipe I use 3 lb ground chicken and 2 whole eggs*
