Chicken Meatballs

On the menu tonight was homemade chicken meatballs with a side of zoodles or whole grain pasta! I topped it off with my favorite Mids pasta sauce. The meatballs were “knock your socks off” good, and I just needed to share this recipe with you all.

Chicken Meatballs

  • 1 egg – beaten
  • 1 lb ground chicken
  • 1/4 cup Parmesan cheese
  • 1 T Gluten Free Baking Flour
  • 1/2 cup Shredded mozzarella
  • 5 Fresh Basil leaves – chopped
  • 1/2 onion – chopped
  • Salt and Pepper
  • 1/2 T Italian seasoning
  • 2T Pizza Sauce

Preheat oven to 400 degrees.

Combine the beaten egg, chopped onion, pizza sauce, Parmesan cheese, mozzarella cheese, chopped basil, salt, pepper, and Italian seasoning to a bowl and mix well. Add in ground chicken and mix until consistent.

Heat a large skillet on high and add enough olive oil to cover the bottom of the pan. Scoop the chicken meatballs into the pan with a spoon.  Cook for 30 seconds to 1 minute on each side, depending on size. I made 11 fairly large meatballs, so I let them cook for a minute per side until golden brown. Also, my meatballs were more oval than round because I just plopped them in the pan without rolling into a ball (the mixture is too sticky for that.) After the meatballs have been browned, place on a greased pan and put in the oven on 350 for 15 minutes. Enjoy with your favorite pasta and sauce! 🙂

Alternate cooking method: skip the browning process and place the meatballs in the oven on 350 for 20-25 minutes or until lightly golden brown!
