I have a Mexican food obsession. I love cooking fajitas because they are both healthy and delicious. Tonight I made chicken fajitas with some help from my favorite sous chef 🙂
- Cilantro lime brown rice (made on the stove top)
- Sautéed peppers and onions
- Grilled chicken with turmeric, chili powder, cayenne pepper and salt
This meal is so easy to make and it includes fresh vegetables, lean protein, and whole grains (win, win, win). The only tough part about it is trying not to eat the entire bag of tortilla chips- my weakness! I always find it fun to remake my favorite recipes as healthy as I can.
Today I took my own advice and tried a new workout with my workout partner, who just so happens to be my sous chef as well ;). We did a lot of interval cardio and kettlebell work. It was both fun and exhausting to try something I have never done before. My reward for finishing the workout was this meal right here! It was worth every sprint. I encourage you to try to make a healthier version of your favorite recipe. If it turns out spectacular, I’d love to hear about it!
